Eggplant Roll-ups
Ingredients
- Using 1 to 2 eggplants sliced thinly – 12 slices
- Cheeses: Havarti, white cheddar, ricotta, mozzarella, Gorgonzola cheese
- Pancetta (Italian bacon)
- Italian sausage
- Asparagus
- Tomato pesto
- Grilled onion
- Garlic
- Pine nuts
- Sun dried tomatoes
- Fresh basil leaves
- Artichoke hearts
- Grilled or raw mushrooms
Instructions
Cover eggplant with an egg white wash ( helps keep them from absorbing too much oil. Fry in grape seed oil (it’s high temp oil) until brown on both sides. Drain on a rack then place any ingredients you wish on the eggplant slice. Toppings: mozzarella cheese – marinara sauce – parmesan cheese Roll up & pin with a toothpick. Bake at: 375 degrees for 20mins covered – then uncovered for 5 to 7 mins. At this point sprinkle Parmesan cheese on each Then broil until the desired browning & serve.
