Cuban Lemon Pork

Ingredients

  • One Pork Tenderloin ( any weight )
  • Flour, salt, pepper& garlic butter with olive oil, Mojo Lemon Sauce, Lemon Zest Thin LemonSlices & Basil (for garnish)
  • Mojo Lemon SauceIngredients
  • 1 small head of garlic,peeled and separated
  • 1 tsp. salt
  • 1⁄4 cup fresh bitter orangejuice or
  • 4 tbsp. fresh lime juice4 tbsp. fresh orange juice
  • 1⁄4 cup olive oil
  • 1⁄2 tsp. fresh oregano,chopped
  • 1⁄4 tsp. ground cumin
  • 1 pinch dried oregano,crushed Salt to taste Instructions

Instructions

Crush together garlic cloves and salt with a mortar and pestle, and put into a medium bowl. Stir in fresh bitter orange juice or fresh lime juice and fresh orange juice, olive oil, chopped fresh oregano, cumin, crushed dried oregano, and salt to taste Cooking Pork Slices Directions Sliced Pork Tenderloin into ½ inch pieces Beat the heck out of them to make them thin ( this also helps with getting out your aggressions ) Place flour in dish or bowl then scrap Lemon zest into the flour Dreg the thin pieces of Pork through the flour and season with salt & pepper & granulated garlic melt butter & oil in a frying pan place Pork slices in oil & lightly brown them on both sides. Remove them to drain remove excess oil from frying pan and place browned pork slices back into the pan. Covering slices with lemon Mojo Sauce & let simmer until done. Buy Plantains as ripe as you can get them ( dark color/black) Peel & Slice on an angle about ¼ to a ½ inch pieces place in medium heated oil and let brown on both sides remove & drain Serve Baby Serve!
