Riced Cauliflower & Veggie Medley
A colorful super fast and easy side dish that can make your day go smoother!
Ingredients
- 2 pkgs Riced Cauliflower frozen
- 2 1/2 cups corn carrots peas & green beans frozen or fresh
- 2 tbs butter salted or unsalted
- 2 tbs olive oil
- 2 tbs Hoisin sauce
Instructions
- I used two packages of frozen Riced Cauliflower I bought at Costco, and it's inexpensive!

This combination of vegetables provides a good source of essential vitamins and minerals, including vitamins A, C, K, B6 and other B vitamins, and the carrots, peas and green beans are good sources of dietary fiber, which helps promote healthy digestion.The fats from the butter and olive oil helps to increase the absorption of essential vitamins and minerals from the vegetables. Sautéing the vegetables helps to caramelize them, which brings out their sweetness and enhances their flavor. Riced Cauliflower is low in calories, full of flavor and a delicious low carb side dish - satisfying and tasty!
