Notes
The word tortilla originates from the Spanish word tort meaning “cake” and its first documented use was around the mid-1600s. The food itself, a thin flatbread made from dried and finely ground corn, can be traced back many thousands of years to people of the Sierra Madre Mountains in Mexico Aztecs and Mayans would use the tortilla in many of their foods as it acted as a main source of energy. It was often eaten plain, dipped in a chili sauce, or stuffed with meats, beans, squash, and other ingredients Crispy-edged and light, like thin-crust pizza. You can top them with whatever you like, and don't forget to include a layer of shredded mozzarella cheese that, when melted in the oven, creates a sturdy barrier for the toppings. A dusting of dried oregano somehow makes everything taste of pizza parlor incarnate and so fun to eat.
