Mama's Own Mac & Cheese

A Super Creamy Sweet & Savory Comfort You Didn't Know You Needed !

Ingredients

  • Note: all cheese amounts are your desired amounts
  • 1 pkg white cheddar cheese slices or shredded
  • 1 pkg gruyere cheese slices or shredded
  • 1 pkg mozzarella cheese slices or shredded
  • 1 pkg yellow cheddar cheese slices or shredded
  • 1 stick salted butter sliced into cubes
  • 1 1/2 tbs parsley for sprinkling
  • 1 tbs paprika for sprinkling
  • 1/2 cup parmesan cheese for sprinkling
  • 4 tsp salt use your judgment
  • 1 tbs olive oil
  • 3 tsp sugar
  • 2 cups milk
  • 4 eggs yolks & whites
  • 1 lb elbow macaroni cooked

Instructions

  • First pre-heat your oven to 375 degrees so it will be ready after you finish building your creamy delight.
    Cook elbow macaroni and let cool before using.
    1 buttered oven safe pan, in a separate bowl, place the 4 eggs and beat eggs well then add milk then olive oil, add sugar then salt and mix. In the buttered oven safe pan pour one layer of elbow macaroni then place a few butter chips all around, next add your first layer of cheese ( any order in ok) then another layer of macaroni then more cheese & butter chips. When you reach to the top of the pan with layers, that's when you pour over the top the egg mixture (pour evenly).
    Now, cover pan and place in 375 degree heated oven for 40mins.
    Then remove from oven, uncover and sprinkle the parsley & paprika and finally the parmesan cheese evenly over the top, then place back into oven for 35 more minutes at a temperature of 325 degrees (uncovered).
    For the last step if you desire, after you reach 30mins, you can start to broil the top but you have to watch closely so it doesn't burn - just brown a little.
    Remove from oven and let stand at least 15mins. then enjoy!

Mama's Own Mac & Cheese is a comforting dish that the whole family enjoys. This delightful delicacy can be traced back to a 1769 cookbook written by Elizabeth Raffald. However, upon further investigation, we discovered an even earlier origin in the 13th Century. It is claimed that the creators of Mac & Cheese can be found in a cookbook called Liber de Coquina, authored by two individuals from Italy and France. Liber de Coquina, which translates to "The book of cooking/cookery," reveals that many others have also laid claim to this fantastic recipe.
Nevertheless, I am grateful that my Mama Frieda decided to prepare this enjoyable and delicious treat.
