Struffoli (Honey Balls)
Ingredients
2 cups all-purpose flour, plus more for dusting
4 tablespoons unsalted butter
3 tablespoons granulated sugar
1/4 teaspoon salt
1/3 teaspoon baking powder
3 eggs
1 teaspoon vanilla extract
Zest of 1 orange or 1 lemon
3/4 cup honey
1 tablespoon orange juice (optional)
3 cups Peanut oil for deep-frying
Sugar sprinkles
Powdered sugar
Instructions
Mix flour and baking powder, melt butter and add to dry mixture, add the sugar. Beat the eggs and add. Add the lemon or orange zest, Mix together, and begin to knead until you get a smooth dough. Cover for 30 minutes. Now cut the dough into 6 equal parts and roll into long “breadstick like” pieces. Cut into small pieces ½” by ½” and roll into balls. Heat the oil to 365 and fry until lightly browned. Let cool and drain on a paper towel. Heat the honey on low until syrupy. Coat the honey balls and mound them up on a plate, or put a tall glass in the center to make a wreath shape. Sprinkle with colored sprinkles and let cool before serving.
