Veggie Chicken Soup

Ingredients

  • 2 to 3 containers low salt chicken broth (or your broth of choice)
  • 1 cup chopped kale
  • 1 cup chopped spinach
  • 1 cup green onion
  • 2 cups mixed frozen vegetables
  • 2 cans chunky tomatoes
  • 1 to 2 pounds of chopped chicken (No Skin) sautéed then added

Instructions

Salt and pepper chicken and sautéed in butter. Pour broth into a large soup pot and bring to a simmer. Add onion and let simmer for 5 minutes. Add kale, spinach and vegetables. Let simmer for 10 minutes and add the chicken.  Let gently cook on low for an hour and a half or longer before serving.

    Chicken broth is a great base for a delicious soup, if you prefer vegetarian, use vegetable broth and tofu. All of the added vegetables and spices help to give it a ton of flavor. Depending on the vegetables and spices you have chosen, you can create a variety of different flavors and combinations. And it’s healthy!
