Vito's Healthy Broccoli Salad

With just a couple heads of cut-up Fresh Uncooked Broccoli and a little of this, and a little of that.......Simply Amazing, Trust Me - Vito !

Ingredients

  • 5 cups fresh broccoli cut-up into floret pieces
  • 1/4 cup red onion chopped
  • 1/3 cup cranberries or raisins cranberries suggested
  • 1/4 cup cashews or your choice nuts chopped
  • 1/3 cup sugar or sugar substitute - check substitute measurements
  • 1 cup lite mayo
  • 2 tbs apple cider vinegar

Instructions

  • Cut up fresh broccoli into florets or buy already cut and place in a semi large bowl. Pour over the cranberries, add chopped red onion, chopped cashews and mix together. In a separate bowl pour in the lite mayo, add the sugar, the apple cider vinegar and stir until well blended. Pour the blended mayo mixture over the broccoli mixture and mix together. Watch the magic happen before your very eyes. So easy but so delicious!
    Refrigerate until chilled and enjoy!
