Vito's Linguine Fini Carbonara
A hearty creamy smooth tasting medley of flavors that will give your Family and friends a night to remember.
Ingredients
- 4 tbs butter salted or not salted
- 4 cloves garlic chopped
- 1 white onion chopped
- 1/3 lb Prosciutto (Italian ham) or Pancetta (Italian bacon) thinly sliced
- carton half & half use until desired thickness
- 1 tbs parsley dried or fresh chopped
- 1 bunch green onion scallions chopped
- 1 tsp black pepper sprinkle
- 2 tbs olive oil for pasta water
- 1/2 lbs Linguine Fini (fine) use Fini Linguine suggested
- 3 tbs parmesan cheese parmesan is optional
Instructions
- The recipe that Vito creates is “Low Salt” conscious recipe. His Linguine Fini Carbonara includes just a few simple ingredients: onion, parsley, Prosciutto or Pancetta, butter, half & half, garlic, and linguine pasta. It is a simple yet satisfying dish that can be enjoyed as a main course or as a side dish.To begin making the dish, start by sautéing the onion and garlic in a saucepan with butter over medium heat. Once the onion and garlic have softened and the butter lightly browned, add the Prosciutto or Pancetta and cook for a few more minutes, then add half & half (creamer) to your desired thickness & continue cooking, stir & sauté.Next, add linguine pasta to boiling water and cook until it is al dente, or cooked through but still slightly firm. Now add some parsley to the sauce mixture and stir, then pull some linguini directly from the boiling water with tongs and let excess water drain. Add pasta directly to the Carbonara sauce mixture and combine. Once pasta and sauce mixture are thoroughly combined, it’s ready to serve.To serve, divide the Carbonara into individual plates and top with freshly grated Parmesan cheese, if you wish. The result is a rich and creamy dish that is sure to please even the pickiest of eaters.
