cook spinach, squeeze out water, add chopped artichokes, red sun-dried tomatoes, bacon, sour cream, pico de Gallo & hold salsa till the end. Then mix in your mozzarella cheese well and prepare heated pan with a little olive oil and butter and then place one spinach tortilla on pan and half of the mixed ingredients on top and spread out.Then spread out the Monterey Jack cheese, then place another spinach tortilla on top like a sandwich - place flame on medium heat then place lid and cook. After cooking for a while check for browning and flip to the other side and do the same. After browning remove from heat let cool a bit, cut and enjoy - then add little more pico de Gallo and salsa, then place little dollops of sour cream on each cut piece and top with mixed salsa and pico de Gallo and enjoy enjoy enjoy
