Vito's Ultimate Frittata (The Omelette)
Ingredients:
1 Yellow Squash, pre-microwaved for 1 minute
1 cup Broccoli Florets, microwaved for 2 minutes
1 cup Cooked Pasta (your choice)
1 Yellow Bell Pepper, diced
1 Red Bell Pepper, diced
1 Red Onion, diced
1 cup Shredded Cheddar Cheese
1/2 cup Grated Parmesan Cheese
6 to 8 Eggs
Salt & Pepper to taste
Sour Cream (for serving)
Instructions:
Preheat your oven's broiler.
Prepare Vegetables:
Pre-microwave the yellow squash for 1 minute to soften.
Microwave the broccoli florets for 2 minutes until tender.
Cook Pasta:
Cook your choice of pasta according to the package instructions, then drain and set aside.
Prepare the Egg Mixture:
In a large bowl, whisk together the eggs with salt and pepper to taste.
Cook the Vegetables:
In a large, oven-safe skillet, sauté the diced yellow bell pepper, red bell pepper, and red onion over medium heat until they begin to soften, about 5-7 minutes.
Add the pre-microwaved yellow squash and broccoli florets to the skillet and cook for another 2-3 minutes, stirring occasionally.
Combine Ingredients:
Add the cooked pasta to the skillet, mixing all the ingredients together evenly.
Pour the whisked eggs over the vegetable and pasta mixture, ensuring the eggs are evenly distributed.
Cook on the stovetop over medium heat until the eggs are mostly set, but still slightly runny on top, about 5-7 minutes.
Add Cheese:
Sprinkle the shredded cheddar cheese and grated Parmesan cheese evenly over the top of the frittata.
Broil the Frittata:
Place the skillet in the oven under the broiler. Broil for about 2 minutes, or until the cheese is melted and the top is golden brown. Keep a close eye on it to prevent burning.
Serve:
Remove the frittata from the oven and let it cool for a minute.
Cut into wedges and serve each piece with a dollop of sour cream on top.
